      On flop should I raise him? try to make him fold overpairs but go broke vs sets, or should I call like I did and try to get the fish in too

      If you think you can blow him off overpairs you should absolutely raise the Flop. We don't want to let the fish stick around because he can have stronger flush draws so we want to force him out.

      With the nut flush draw i definitely call to let the fish come in so I can dominate his draw

      You have showdown value and very good equity, but likely every overcard is bad for you unless it is club. So I would also prefer raising flop to get folds a little better hands (I think JTs might easily bet/fold flop if you make it 11$) and since you have around 55% equity against every overpair I also don´t mind playing there for stacks. Not sure what you´re going to do on the river if he shoves- if you feel he is too strong then calling and folding river ui is fine, but again you may consider shoving, since you sometimes have best hand and quite a lot fold equity
