      I wouldn't check/call the flop though. The overcard means nothing necessarily, but I would only ever check/raise the flop.

      Unfortunately, this won't tell you anything, because he is showdown bound with his five, or seven, or Jack, or anything better. He plays a lot of hands, and he hates to fold.

      The small bets look like his idea of valuetown, so at least you got a (relatively) cheap read on him.
