      Donking is your only option here. You don't want to give a spade draw getting there.
      You should bet bigger, I would bet pot size.
      Turn: Just put him all in here. Betting 2$ just give him anther chance to hit his draw.

      Yes, you have to protect your hand from any draws.

      Should the bet be bigger?
      On turn you could bet a bit more, ~$2.50, might even consider shoving but that will look a bit too big overbet, I think. I like betting smaller a bit more.

      Is betting every street ok, or should I slow down somewhere?
      No way you can slow down on any of the streets, expect the board would be paired.
