In some video's I saw that you could label your opponents with a colour and then that you could add some stripes or something like that to remind you of some more specific stuff, but I can't find how to do the latter

You probably mean "Notes" not "Stripes". To do so you just have to click with your right mouse button on the specific player and select Note. Then you would type the notes you have on that player, which then would pop-up whenever you cross your mouse on the player.
