Is it worth it to move my bankroll on bet365 to play NL4 as opposed to playing NL5 at PokerStars?
Is there enough traffic so I can find enough tables at all time? (6 tables minimum)
I haven't played much on iPoker but at one time I did same kind of research you are doing now.
Both rooms have their benefits.
If your goal is to have 6 tables minimum on all times, then I would say iPoker is not for you. I haven't looked at the current traffic but some time ago it didn't look good at off-peak hours.

You may get away with playing 6 tables of speed at NL4/5 at iPoker, but your problems will start when you want to move to NL10. Weirdly, there is usually traffic at NL20 but NL10 speed is pretty dead. MPN's Blaze doesn't get much traffic outside of NL2.
Party or 888 would be the better options but you may be restricted to 4 tables per limit.

So most of the poker sites are blocked in my country.
So I think my only viable choices are pokerstars & 888 -> I'm playing on PS atm.
Do you think there is more fish @ 888 to justify the switch & lower traffic?

I was playing at 888 but I switched to Stars.
The player pool might be a bit softer but 888 doesn't allow HUD on speed tables. The traffic is weaker. I like Stars software more. And 888 vip system is a bit confusing.
Ofc you can switch an see how you like it. You can always go back to Stars
