Preflop: I would try to raise him and get more information about his hand.
Flop: Bet/Fold.
Turn: I would consider here check/fold because such a NIT will usually hold QQ+
River: Check/Fold.

you could squeeze pre but when you get it in you are maximum fliping
on the river you should try to block bet for value

I would've been tempted to re-raise flop to see if he was playing on some overcards. I'm not sure if this is the correct play though. If he holds QQ+ we are way behind but I think most of the time we are ahead with overpair?

Btw what is the official definition of a nit?
