I have a middle pair and good kicker in a board that usually hits villain's range more than my range, so I thought it was a good opportunity of checking back.

After that flop in check and hitting a trips with GK, I had to try to extract some value. This check/raise looked so strong, but what kind of hand would play that way?

I like the fold OTR.
I don't think I could find it, which would be, I believe, a mistake. WP

You have some sample on villain and he looks quite tight. His stats don't scream fish but then he goes ahead and donks OTF? That could be a very strong hand. However, in my experience weaker players tend to donk with draws and weaker made hands.

There is a group of players who like to check the turn when they hit the nuts. So, because villain looks quite tight pre, could we think that he this time donked with a very strong hand like a set and OTT when he hit a full house he check? I think that could make sense. There are some other possibilities too. He could have donked with a FD and was a fish and check raised OTT when the turn paired. In that case he would have a flush OTR and beat you.
The last option is that he donked a weak made hand ( some jack ) and check raises OTT when he hits trips. Those hands you would beat but those hands are also quite well blocked.

I think the fold OTR is ok.
