It won't even let me have a smilie 
just displays the code not the actual smilie. Same goes for centering the text. you see the code but doesn't centre. Any ideas?

Bear with me as it's not my speciality 
Have you tried the options? Basically:
- Within the forum, click on "Your Profile" (Top left'ish of page)
- Click "Edit Signature"
- Click "Options" (below the text box)
- Uncheck each of the 4 options shown & "Submit"
Sorry if you've already tried this or if it doesn't work.
We're pretty flexible as to what you put in your signature, just remember to stay within the forum rules, no affiliate links, advertising other sites etc.
