How can I deal with this EV adjusted graph? Has it any worth? Is this just the variance? And should I continue to play my game despite of this graph?

This is a dangerous field, because I have heard both opinions: the graph is crap and the graph is a good guess.
I think the truth is somewhere in between, you can take a look at it and it should give you a better insight than your actual winnings. But again size does matter. You can't expect the graph to be true after 1 SNG, and I think you can't expect it to be true after some hundred.
So take a look at it, don't trust it that much, and use it as a motivation to keep on going, but also to keep on working on your game.
