If you put your opponent on AA and you're 99% sure about that, what hand would you play (fold is not an option in this case!)?

Anything except PPs and Ax hands, becouse they have too little outs against AA Otherwise lots of implied odds as long as you get to the flop cheaply. But I would prefer suited connectors with no high cards.
I prefer pp's over suited connectors. No set no bet, simple 
But yeah, it sucks when vilain rivers set of aces over your set of let's say sevens. While with suited connectors if you flop smth mostly it's FD or OESD which encourages you to get involved into hand more than you should.

A♠ A:h vs 8:c 9:c = 77.22% vs 22.44%. Split pot (????) 0.30%
Most other suited connecters are the same. This is if they are a different suit to the Aces.
A:s A:h vs K:c K:d = 81.06% vs 18.55%. Split pot:0.38%
A:s A:h vs 7:c 7:d = 79.69% vs 20.05%. Split pot:0.26%
Suited connecters on an OESD and FD flop are 56.26% favourites
Suited connectors on an OESD flop are 36.87% underdogs
Suited connecters on an FD flop are 39.29% underdogs
These are very rough calculations but should be pretty accurate.
If your AA opponent knows that your fold button is broken for that hand, you're doomed. He just goes all-in and sees how you're forced to make an absolutely -EV call.
If it's a normal raise, stacks are full and I know he has aces, I see the flop happily with any two cards if you ask me. But other pocket pairs are the best.
Playing set or fold with any pocket pair would be wildly profitable in this situation. If you flop a draw with your suited connectors, and your opponent protects his overpair correctly, it's not that great.
Personally I might take a shot with QJs ...
First because u can risk your shot on a FD but also I like it because, most of the time My AA got cracked, or I cracked someone's AA it was when u have like a flop of QJ7, TK9, or better, AKT68 board. Also we always start doubting about a flop with those cards in it, while holding AA.
Anyway QJs is for me the most complete hand in poker.... you just "never" miss!!!
Any two. If I could see my opponents hole cards I would never raise preflop, nor would I ever fold unless someone reraise the raiser. Just limp-call every hand, even 72 offsuit.
