I have always kept quite a minimalist hud as I tend to find on the most part, people's tendancies are the same preflop and post flop (there are very few passive preflop players who get aggressive post flop).

So I use name / number of hands on the first row
VPIP / PFR / 3bet on the second row. (VPIP means Voluntarily Put $ In Pot and is how often a player calls or raises preflop, the bigger the number the looser that player is. PFR is Preflop Raise and is how much that person raises when nobody has raised themselves. So someone with a VPIP of 15 and a PFR of 11 pretty much never limps in but does sometime call other players raises rather than 3 betting themselves.)

For playing anyone up to 100 bets deep this is a good start. Once you have a hang of using this information, the next most important stats are how often people fold to steals and fold to cbets. This information you can use to decide who to steal (bluff) from and who to only value bet against.
