One-day brownie

Heatwave, schmeatwave: life must go on, rooms must be painted, brownies must be made.

Ingredients:

:club: one medium zucchini
:club: 1 cup – 1.5 cups sugar (depending on taste)
:club: 0.5 cup oil
:club: 1 teaspoon vanilla
:club: 2 cups flour
:club: 0.3 cup cocoa powder
:club: 1 teaspoon baking soda
:club: 0.5 teaspoon salt

Grate the zucchini and mix in the sugar, oil, and vanilla. Wait 5 or 10 minutes – this is crucial, because it allows the moisture to come out, so you can mix in all the dry ingredients.

See what a change a five-minute wait makes?

Mix in the rest of the ingredients.

Bake in an ungreased, uncovered pan for 30 minutes in a medium-temperature oven.

I’ve made them twice in the last week… they never last longer than one day... _evil:

This is actually the pistachio baklava, the "regular" one is filled with walnuts, but this one also looks delicious :) I'm also the baklava fan
