I think you could go with bet bet bet here. Other line would be to check flop and make a delayed cbet.
Since you started checking OTT and appear capped I think you can call the shove OTR when no draws complete.

I would bet a little bit bigger flop (2/3 of the pot) and continue betting OTT. OTR I would fold to his overbet.

Hard to believe in anything but 99. Low sd makes sense as well as 55 or 66

How can I discipline myself to fold AA? I can never seem to fold them.

I´m beginner, so I had to solve this issue recently also, just like you. This helped me: firstly AA is the best hand pre-flop, after flop it´s just top pair, therefore you should play it like one. Particularly in this hand you should fold imo, because there is a lot of straights, possible full houses and also some 2 pairs. This all beats you, but what should you convince mainly is the size of his bet OTR, it´s 1 and 3/4 of the pot, which is with AA too risky (at least is for me) and doesn´t worth it imo. It´s just tough spot and I think the best is, to wait for better opportunities. He might be bluffing, but that happens :)
