I'm not going to give up overpair even against so much action. You are most of the time ahead on the flop. I would play just like you do.

But what can you put the sb on that he cold caps into 3 opponents OOP? He is only moderatly aggro this screams set to me and small pocket pairs fit in well with his preflop play.

you played it well. i would not give up since sb has just coldcalled preflop and you don't have a good read to make sure, that he is not going to play overaggressively with a hand like A7 or A5 or 99, TT. I can imagine that he coldcalled a hand like 99 TT, against early raising Action. The pot has grown so big to the river that you don't find a way out, given that good odds.
