I notice there is no DoN settings in the ICM trainer, nor the ability to create new structures. Will this be addressed? are there any files I can edit manually to create said structures?

Hello conall88,
As you wrote the ICM trainer doesn't support DoN SnGs and you can't change it.
However you can use 
this site, where you edit the payout structure for Full Ring to 0.2,0.2,0.2,0.2,0.2
