New to the Elephant, how do you filter different sites so that I can see the different sites on different graphs?

Hey BigAl123456,
you can set a fiter via the filter tab in the ribbon bar at the very top of the elephant.

what do you exactly mean speaking of "different sites"? 
Are you referring to different Poker rooms?
