Mostly I'm folding preflop. You could think of 4bet bluffing once in a while but I'm definitely never calling.

Also I don't see him folding much after he double barrels in 3bet pot.

Against a 12% range 3bet with KJo you are a lot behind. WIth a range containing a lot of 3bet bluff (I took 77+,A9s+,KJs+,QTs+,JTs,T9s,98s,87s,76s,65s,54s,AJo+,KQo giving you 39.5% of equity).
Easy fold preflop, or as said before 4bet bluffing can be done on rare occasions.

However I think you totally overplayed your plan. You can't shove bluff on the bet turn since he shows strengh (and doesn't represent anything but an overpair so this is not quite a good spot for 2nd barrel). If he had checked, then you could have carried out your plan even if I don't believe in it. However against a 2nd barrel on such a board that misses most of both ranges your shove does'nt represent anything as well.

Not a good spot to make a stand against him. I would rather fold this hand and next time I open 78s and he 3bets I 4 bet him.

I think he is mostly b/c turn if he is betting that small turn card. If turn were T or higher, then he might take that as scare card and barrel you off low pp-s, but here I think he isn´t really expecting you to folding too often
If you want to make move, then raising flop is better. You don´t have to risk your stack and if he doesn´t have there pair I think he would mostly b/f
