How do you play the sss chart when there are less than 7 people on your table?

The SHC for SSS is for cash game (ring game) only. If you are a short stack in a SNG then you have to play differently! It then depends on how big your stack size is compared to the total amout of blinds in one round.

I strongly recommend that you reread our strategy articles. You seem to mix up SNG and cash games. The SSS only works at full ring cash game tables.
