The are a few reasons as to why we want to know more about villain however the main reason is the fact that we need to have a plan on how we play this postflop when:
1) we hit a pair (TP or 2nd pair)
2) hit a draw (FD or OESD)
3) hit nothing (gutshot, overs, etc.)
So for example in case 1, flop comes down Q83r how many streets do we call versus this fish? What if the board was J73tt with a flush draw?
So when you do not have any information other than he does "weird" things that is bad for us because we have to play a bit more standard and our hand could be dominated easily by an EP/MP range. So as a default folding because your primary choice. 3-betting as thin value against unknown it's hard to justify and 3-bet bluffing a potential fish isn't advisable either so 3-bet as a whole goes out the window.
So you are left with a choice between fold and call and I think that, without much info and only holding position and a speculative hand our fold is fine.
If we are going with the assumption that he is an aggro fishy maniac player then we can call and call down when we hit a hand to allow him to bluff or bet worse.
