That's a very good question.
I am not a pro.
I play 6 or 7 days a week, usually 2 to 3 tables at a time -- and I'm also usually doing other stuff as well -- things like email, watching twitch streams or other video (movies, poker videos) or just browsing sites for other interests.
I play a wide variety of games -- primarily FL 5-Card Draw and PLO8, but 2-7 triple draw, Razz and mixed games sometimes
When I get tired of one I switch (or go do something else).
I do not have any volume goals, I just play when I feel like it.
I don't have a stop-loss clearly defined, but it is unofficially two buy-ins for PL or NL games, or 40 big bets for FL games
If I am up more than two BI, I'll quit when I drop below 2 BI up.
Balance is important -- at least to me. I is important that I devote sufficient time and effort to my family. "Letting things slide" so I can play poker caused problems some years ago.
I'm doing this while playing a weekly Stars Rewards Freeroll ♠_biggrin: so I may have repeated myself a bit 
Did I mention diet and exercise?

Workstation ergonomics is another big factor on how long you can play without getting burnt out. There is material in LTW on that topic too. My working career was in IT -- I've been sitting at a computer daily since the early 80s and I've manage to avoid carpal tunnel. My right shoulder is stiff (mouse related I'm sure) but that's about it.
How's your tilt resistance? Withstanding the slings and arrows of outrageous fortune is a critical skill if you're going to put in long hours at the tables.
