Certainly plausible -- the weakness might be the fact that the pressure of a column of water as high as they pyramid would be hard to contain with stone. Another possible source of trouble would be the floats -- enough floats fail on one block on the way up the shaft would mean that several blocks following would need to be removed to fix the problem.
There is also the problem of friction inside the shaft -- the blocks would need to rub against the top side of the shaft.
It would be cool to try to replicate this using concrete blocks, as this guy did to demonstrate his theory on the building of Stonehenge.

Always nice to see theories about this, but without living in that time it’s tough to know how they really build it.
It could be argued that the planet formed around them with the same level of plausibility.
