To exploit them, you'll need to know them, so first off, you'll need a tracker of some sort. If you don't have one, then see https://www.pokerstrategy.com/poker-software-tools/. Most of them have free trials, and some have discounts for PokerStrategy.com members.
You'll also need to take notes — some of the trackers have built-in note-taking functions.
Once you've identified the player type you're up against, you play in a style to counter their tendencies.
