I guess it was a server restart. That happen 1 time per month between 12.00h-14.00h CET (11.00h-13.00h BST/6.00h-8.00h ET).

Yes -- a "server restart" occurred at 22:00 ET (03:00 UTC)
Estimated 3 hours duration

I imagine they are running a behemoth of old software under the hood - 3hrs for a restart is super a lot 😅

That's long for sure and a weird time for it. i don't think this was planned.

3 hours may mean more than software.
Once a year at the printing plant where I worked we had to have a long outtage when the main power distribution system was in maintenance.
The main circuit breakers had to be dismantled, cleaned, lubricated and tested.
While this was happening, only emergency power was available -- this kept the servers up, but all the user's computers weren't on the emergency circuit.
We used the opportunity to do software upgrades on the servers -- this took about an hour, but the circuit breaker maintenance took 4 hours

Maybe this was the case on PokerStars as well, but that's guessing for us.
