Well, since you asked -- how about a wider variety of games?
There are a vast number of games that aren't offered by most poker rooms:
 5-Card Draw
 2-7 Triple Draw
 NL 2-7 Single draw
 PLO8
 Mixed games line HORSE, 8-Game etc
 Razz
 Stud

All of these games are more exciting than hold'em (IMO of course )
