Is it better to play with a low bankroll (avg buyin 5-10$) cash to build it up?
There are not many tournaments with lower amount of players, and playing bigger ones with about 500+ players has bigger variance. More difficult to get even mincash, not dreaming even about an ft in such events - lower buyins = banana plays.
Currently playing at GG and there are not many of such tournaments and grinding them is a pain.
Is it even worth grinding micro stakes tournaments with huge amount of players?
When you see streamers from higher stakes the fields are not as big (100-200 entries usually)
I would normally suggest that you play at the level where you have about 100 times the average buy-in.
However, even if you have $500 I wouldn't suggest playing $5 tournaments unless you are quite comfortable at that level.
By comfortable, I mean you're OK with losing five bucks, and you're fairly competent at that level.
On GGPoker, the only way to get decent volume at that level is by playing the Spins, and they are high variance.
The problem with playing the $5 tournaments on GG is that they only run once an hour or so, and take a fair while to complete.
Perhaps mix them up.

If you want to play some bigger tournaments you could try to play some <$5 satelittes. Off course you need to beware of the ICM in the late stages of the satellites with in mind the goal is to win a seat.

You could play some sng’s like 90 man ones or on demand/cap tournaments that have smaller fields. it’s good to use Pokersched.com to find tournaments to suit your bankroll.

The same figure is used elsewhere, (I checked 3 other forums) with one using 150 - 300 BI, and the other saying the 100BI is "a minimum" and more is required for tournaments with more than 1000 runners.
So clearly it depends on the player.
If you're comfortable playing an MTT with 1% of your bankroll, then by all means do so.
If not, then build it up.

Depends if you play mass fields or tournaments with only a few hundred players.
It depends also if you play hypers, turbo's or regurlar tournamants.
How faster the blind structure how higher the variance will be.
I've tried to play some low stakes tournaments on GG and I believe that they are very soft. I'm almost certain that it is a better idea to play them than playing cash games, if you want to build the bankroll. Another way is to play Spins, but they are very very high variance game on GG, starting with 15BB most of the time.
Also, some tournaments have a low number of players, even at 2-5$ buy-in levels. I suggest you to play on not "popular" hours if you don't want a big number of players
